Cinnamon Streusel Banana Bread

My Cinnamon Streusel Banana bread is a baked loaf of perefection!! It is of course, gluten & dairy free..but packed full of deliciousness… The crispy sugary topping is the best part, or is it bread itself? I’ll let you decide! It pairs perfectly with a hot cup of tea or coffee, or even as an after dinner treat. My kids take it for snack to school. I will warn you, this loaf disappears rather quickly around my house. Whip one of these up and see how quickly it gets gobbled up in your house. Enjoy!!

Ingredients:

  • 3 ripe bananas
  • 2 cage free eggs
  • 3/4 cup pure cane sugar
  • 3/4 cup pure brown sugar
  • 3/4 cup or 1 stick vegan butter (almost melted)
  • 1 Tsp pure vanilla
  • 1 Tsp Cinnamon
  • 1 Tsp baking soda
  • 1/2 Tsp salt
  • 1 3/4 cup Gluten Free flour (1:1 ratio)
  • FOR TOPPING: 2 Tsp cinnamon & 1/4 cup pure cane sugar

Directions

Mix wet ingredients together in a stand mixer using the paddle attachment. In a separate bowl mix the dry ingredients together and add into the wet. Mix topping ingredients in a small bowl and set aside. Pour the mixture into a greased loaf pan, and cover with the topping mixture. Use a skewer or butter knife to swirl the top. Bake at 350° for 55-60 minutes or until knife or skewer comes out clean. Enjoy!!
