There are times I CRAVE a hearty breakfast sandwich!! One morning I whipped one of these bad boys up after shopping at Trader Joe’s the previous day… Let me tell you, I ate this for the rest of the week! lol It is so simple and hits the spot every time!! This recipe uses only the toaster, one pan, a spatula and a butter knife! Feel free to top yours with a cage free egg for extra protein and nutrients.
Ingredients:
- 1 Trader Joe’s Gluten Free Everything Bagel
- 2 Tbsp vegan mayo (I use Follow Your Heart Original)
- 3-4 slices of uncured ham (free of nitrates & preservatives/carageenan)
- 1 slice vegan cheese (I use Feild Roast Chao Creamery)
- 1 cup fresh spinach or mixed greens
- 1 Tsp avocado oil
- salt & pepper
Directions
While the bagel is toasting, brown your meat in a pan on both sides, then top with the vegan cheese so it can start melting. In another part of the pan, add your oil and spinach, sauté until wilted (be sure to salt and pepper it). Give your bagel a good lathering of the vegan mayo and assemble your sandwich! Enjoy each bite of this satisfying breakfast!!
